Sodium Nitrate/Nitrite Found in; cured meats

Why?; It gives it a red coloring and improves taste.

"Sodium nitrate is used in dry cured meat, because it slowly breaks down into nitrite. Adding nitrite to food can lead to the formation of small amounts of potent cancer-causing chemicals (nitrosamines), particularly in fried bacon. Nitrite, which also occurs in saliva and forms from nitrate in several vegetables, can undergo the same chemical reaction in the stomach. "

Ascorbic Acid is now often added to products with the Sodium Nitrate to prevent nitrosamines from forming, but it's still shitty for you.


Sorbitol


Used as; moisture maintainer, thickening agent in gums, drinks and candy

*Naturally found in berries and closely resembles a sugar.
Safety; Acts as a laxitive to sensitive people but otherwise is 'safe'.


Stevia (i've never even heard of thsi one!)


NOT APPROVED IN THE US/CANADA/EC (thank god)
Safety; Studise in rats show it causes severe birth defects, DNA mutations and reproductive challenges. It also messes with the carb absortion of animals.



Sucralose

Found in; 'Splenda', diet foods
Safety; this artical believes it's safe (I disagree from what I read last year) but it's siginficantly safer than Aspartame and Saccharin. not much info here. ;/
